We start with the humble but awe-inspiring plant called Lemna, part of the duckweed family and one of the most sustainable, and nutrient-dense plants in the world. This tiny aquatic plant can contains up to 50% protein and growing throughout the year, doubling in biomass every 48-hours in many cases!
Though lemna floats on the surface of water, its actual water footprint is 10x lower than that of soybeans. We grow the plant in controlled aquafarms that allow for the continuous recycling and retention of fresh water. Our cultivation approach does not require arable land to produce this highly sustainable and versatile protein, allowing us to cultivate it anywhere in the world.
Following the harvesting of our plants, we use simple and clean handling steps - milling, filtering and drying - to extract the pure protein from the tiny lemna leaves. The final product is: a colorless, odorless protein we call “Rubi Protein™”.
Now the protein can be used to create the food products you love to eat with no compromises.
